So on the flat earth model, the sun acts kind of like a spotlight. But wouldn't people in the areas not covered by sunlight be able to see the sun as well?

Sure, it has to get tiring to answer the same questions repeatedly. Do you have a link or two to the answer? And surely whatever answer there is can be improved. Go ahead and direct us there and keep improving it.
