Surely this has been answered somewhere but I couldn't find the question using the search function.

..Wouldn't the Sun and Moon always be visible, at least with a telescope?
Real, Honest question.
I always say I don't believe in any model of the earths shape at this point, because I don't personally know enough to be convinced about any shape/model.

I appreciate the reply, but I'm really looking for a more specific FE answer from someone who truly believes/understands the FE model.

How much more specific? The FE answer to your question is that perspective causes the sun to vanish at sunset. I highly suggest browsing the wiki some, as it does contain a bit more of you're curious.
