Title: Stars moving around

When looking up in the night sky from Europe, one can see the stars moving around a star labelled as 'Pole Star' (over the duration of the night). However, when looking up the night sky from e.g. Australia, one can see the stars moving roughly around a star constellation called the 'Southern Cross'. How is this working exactly on the flat earth? Is there some documentation available?
