Is there a flat Earth diagram that explain the Moon's motion around the flat Earth with it's inclination to the equator, changing size each month, moving different speeds with the Sun and relations of it's phase with it's position relative to the Sun?

Are you expecting the motion of the moon to be regular and or predictable?

The simple explanation for that image is that the source of light is shining on the mountain from below.

That could be happening.  The focus of the sun could be lower than the clouds and the moutain. 

Also, light does not always travel in straight lines.

Center?  What do you mean by "center" of the earth?  Do you mean the North Pole?

If you mean the North Pole = Center Of The Earth then the answer is simple:  the sun's rays never come close enough to heat things up beyond what seems "cold" to you. 
The same reason why the Antarctic perimeter is "cold" and why it gets "cold" at night anywhere on this planet.

Still to embarrassed to admit to my friends that I dont believe 100% the world is round, but my family agrees that the world COULD be flat. So there's that. Hope to someday be confident in either side of this.

Keep it to yourself for the time being and learn to use it to your advantage --- the way the shills do. 
Eventually, you will realize how hoaxes and disinformation can be used to understand people at a level that surpasses most complicated psychological tests. 

For instance, if somebody talks like as if a hoax was real, you know at least 1 of 2 things must be true: 
1) the person is dishonest;
or
2) the person does not question authority and is too gullible to hold an intelligent opinion.

The earth is the sun's source.  We are all in it together. 

The sun is just a focus of energy much similar to the bright spot that burns ants as you hold a magnifying glass above them. 

If you can grasp that the energy burning the ants is NOT a physical object, then you can begin to understand that sun that turns above your head.
